Ingredients:

 

¨ 1/2 lb Salmon

¨ 10 jumbo prawns (pre-cooked)

¨ 2 tbsp oil

¨ 1tbsp butter

¨ 1/2 bag of small rainbow rotini (340g)

¨ 1 tin of pineapple (8 oz)

¨ 2 kaffir lime leaves (optional)

¨ 1 cup carrots

¨ 3/4 cup cherry tomatoes

¨ 1 small zucchini

¨ 1 1/2 cup peas in the pod

¨ 1 tsp paprika

¨ 2 tbsp roasted pine nuts (optional)

¨ Sprig of Thai Sweet Basil or Coriander

¨ 350 ml Thai Away Red Coconut Curry sauce

 

 

Rainbow Red Curry Pasta

With BBQ Salmon & Prawns

1. BBQ or pan fry Salmon whole and sprinkle paprika

2. Boil pasta in salted water for 8-10 Minutes, al dente; drain, rinse and place in bowl

3. Sauté carrots in oil and butter for 1 minute

4. Add garlic, kaffir lime leaves, zucchini, peas pods and 1/2  cup cherry tomatoes to fry pan

5. Sauté on medium for 2 minutes

6. Add prawns, pineapple and red curry sauce and simmer for 1 minute

7. Poor contents of fry pan on top of pasta and toss

8. Top with chunks of salmon, remaining cherry tomatoes, pine nuts & Thai Sweet Basil or coriander.
